Three Redfish


My fisherman husband loves to catch redfish. They are plentiful around Grand Isle, La and one of my favorite fish to eat. Some like them whole with scales on and grilled on a pit.   My favorite is in a redfish courtbouillion. This is a Louisiana Creole dish made with a rich red sauce with black olives, fresh lemon slices, and huge chunks of flakey white redfish served over hot rice.
